Weight watchers points, 1/2 cup of cucumber salad = 4 points
This cucumber salad is a great addition to your summer line up. It’s super easy to make. You only need 4 main ingredients and you can make it ahead of time. I like to make it the day before so the cucumbers have a chance to absorb the flavors.
I am always looking for new side dishes to pair with my meals. A lot is times we slice them and salt them lightly, or put them in a regular salad. My son does not eat salad, so I need to work in a pleasing flavor. Kids like sweet things, and since this Cucumber Salad is sweet you may get your kids to try it. They might actually like too!
INGREDIENTS
- 3 cucumbers
- 1 cup water
- sugar (start with 1/2 cup and add more if you want it sweeter)
- 1 cup white vinegar
- salt
- pepper
You want to make sure you use fresh, firm cucumbers, otherwise they may become soggy.
First, peel the cucumbers and slice them. In a large bowl or container mix the water, vinegar, sugar, salt, and pepper. You could also add sweet onions or red onions to the cucumber salad to add more flavor. Taste the liquid, and if you want it sweeter just add more sugar.
Add the cucumbers to the mixture and chill overnight for best results.
Cucumber salad pairs well with any meal. This salad makes a great side dish at a BBQ because it is cool and refreshing. It has a little bite from the vinegar and some sweetness from the sugar.
