Fried rice is a great addition to any one of the Chinese recipes. You can make it with vegetables, shrimp, pork, or chicken. You can add whatever protein you like.
I always thought fried rice was really hard to make until I tried it. People ask me all the time, you make you own Chinese food? They are amazed. It really isn’t difficult and it takes no time at all.
Plain rice works well with a meal most of the time, but when you are eating Chinese food fried rice is the perfect addition. You could also have both because some people do not like fried rice.
My son would look at it and say I am not eating that. I told him just try it. To his surprise he loved it.
INGREDIENTS
- 2 eggs, beaten
- scallion
- carrots
- peas
- rice, boil in the bag
- 2 tablespoons gluten free soy sauce
Cook the rice the day before you want to make the fried rice. Put the rice in a microwave safe bowl and cook for the time specified on the box. The rice needs to cool down before you put it in the refrigerator and let sit for 24 hours.
The next day put vegetable oil in the pan, swirl it around, and heat the pan. Put the eggs in a measuring cup and beat them. Add the eggs to the pan and swirl them around to ensure they cook evenly. Put the eggs aside until the end.
You may need to add a little more oil. Now put the onions and carrots in the pan until they soften. Add the rice, peas, and the soy sauce and blend it all together. Cook the fried rice for about 2-3 minutes. Taste the rice mixture and see if you need any more seasoning.
