Today I am going to show you how to make Gluten Free Dairy Free Chinese Chicken.
Some days I don’t feel well and I just want to make a simple meal. Something easy and light on the stomach. When the weather changes I tend to feel sick to my stomach. Chicken is usually a good choice because it is easily digested and some kind of carbohydrate seems to help.
You may think Chinese food is hard make, but it really is not. I cannot go out to eat Chinese food as I get very sick because everything has soy sauce in it. I started looking up some recipes that my family and I liked. Any recipe can be easily modified and made gluten free and dairy free.
That being said, I am going to show you how to make this simple, but delicious Chinese Chicken.
INGREDIENTS
- 1 chicken breast
- 3 tablespoons gluten free sweet soy sauce (Kikkoman)
- 2 teaspoons sesame oil
- 1 teaspoon of red chili paste
- 6-8 mushrooms1/2 bag of peas
- 1 boil in bag brown rice
Heat up a frying pan with 2 teaspoons of sesame oil and 3 tablespoons of sweet soy sauce. Season the chicken with salt and pepper and put it in the pan along with the mushrooms. Then saute the chicken for about 5-7 minutes per side.
At the same time you start the chicken put the rice in a microwave safe bowl with water and cook for 10 minutes. Cook the bag of microwavable peas after the rice has finished.
Next, add the peas and the chili paste to the pan and finish it by sprinkling some scallions over the top of the Chinese Chicken mixture.
Finally, put some rice in the bowl and spoon the Chinese Chicken over the top with some sauce. Now you have homemade Chinese food and you don’t have to worry about feeling sick afterward.
I will be making spring rolls with my son this week and I will share that recipe as well. It will be something you can pair with this recipe.
