Summer time is right around the corner and I am excited to start grilling! Everyone needs a good BBQ sauce in their repertoire. Making BBQ sauce from scratch seems like a chore, but it’s actually very simple and gratifying. I have made a couple different ones, but this one is new. How does Pineapple BBQ sauce sound?
You can use this BBQ sauce on anything. If you like your sauce on the sweeter side than this one is definitely for you. You can also tweak the recipe to your own liking. For instance, you can adjust the sweetness or the heat level.
INGREDIENTS
- 2 – 6 oz. cans Dole pineapple juice
- 1/2 cup brown sugar
- 1/2 cup ketchup
- 2 cloves garlic, minced
- 1/2 onion, diced
- 4 tablespoons honey
- 2 teaspoons chili powder
- 1/2 teaspoon spicy brown mustard
- 2 teaspoons lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon canola oil
It’s time to make some killer pineapple BBQ sauce. All I can say is my son’s plate was totally clean when done with his meal and when it hit the floor the dogs were right there to lick it up and looking for more.
I made this BBQ sauce to go over chicken thighs, but you can use it on whatever protein you chose.
First, dice up the onion and mince the garlic. Put some canola oil in the pot, add the onion and garlic. Cook on medium low for about 5 minutes, until soft. Add the pineapple juice, brown sugar, ketchup, honey, mustard, chili powder, lime juice, salt and pepper. Stir to mix in the ingredients.
Cook on a low boil for about 25-30 minutes and stir occasionally. It needs to cook down and thicken up. You will know when it is ready when the pineapple BBQ sauce coats the spoon. It will have a thick, sticky look and smell phenomenal!
Let the pineapple BBQ sauce cool for about 10 minutes. Pour over the grilled chicken thighs. It would be great on pork or shrimp as well, because it has a similar taste to sweet and sour sauce.
