Sausage, pepper and cheese sandwiches are a simple and delicious meal. I remember having big trays of this at parties. You can feed a lot of people and it is easy to make. It’s great because you can put all the ingredients into one pan and throw it into the oven. You can also cook it on top of the stove or on a grill.
INGREDIENTS FOR SAUSAGE AND PEPPERS SANDWICHES
- 1-2 pounds of gluten free sausage
- 2 medium onions
- sweet peppers (2 bell peppers or 12-15 mini sweet peppers)
- salt
- pepper
- olive oil
- gluten free dairy free rolls
- gluten free dairy free mozzarella cheese
Preheat your oven to 350 degrees.
Cut your sausage pieces in half. If you are going to use both hot and sweet sausage you should make them different sizes. This will allow people to distinguish whether they are hot or sweet.
Next, slice the peppers into strips and add them to the pan. Use different colored peppers as this will make it visually appealing. The colored peppers are also sweeter than the green ones. Slice up the onions and add them to the pan.
Add salt, pepper and olive oil to coat the sausage, peppers, and onions. Stir up the ingredients to coat everything with the oil. Place the pan in the oven and cook for about a half hour.
Five minutes before the sausage and peppers are done, toast the rolls. Push in the inside of the rolls or hollow them out. This helps to keep everything in the roll. Put the sausage, pepper and onion mixture on the bread. Add a healthy portion of mozzarella cheese on top of your sausage and pepper sandwich. You can put the sandwich under the broiler for a few minutes to melt the cheese.
