What can you do with your leftover black beans and rice? I was recently diagnosed with breast cancer. After doing a bunch of research everything pointed to a primarily plant based diet. So I thought why not take the black beans and rice and put some eggs on top. What do you get,? Black beans with rice and eggs. You get a bunch of vegetables in this meal, plus the beans and rice make a complete protein.
What is a Complete Protein?
Your body needs complete protein to work properly. These are formed from amino acids, which are the building blocks of protein. There are 20 amino acids, but there are 9 essential amino acids that your body cannot produce on its own. Those 9 are the ones we need to get from out food. If you are eating a plant based diet you will want to know what food combinations work to make a complete protein.
I wanted to make something with a bunch of vegetables that my 13 year old would also eat. There was leftover black beans and rice, so I figured why not heat it up for breakfast and put some eggs on top. He told me it was way too good! INGREDIENTS
- 2 cups brown rice; yields 4 cups of rice
- yellow, red, and orange bell pepper
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 can diced tomatoes
- 1 can black beans
- salt
- pepper
- eggs
In a big pan saute the onion and bell peppers until soft. Add in the tomatoes black beans, brown rice, garlic, salt and pepper. You need to add about 2 cups of water for the rice to cook in and absorb. Add more water as needed. Cook this mixture down until the rice is soft. About 15 minutes.
In another frying pan crack some eggs and cook them sunny side up. Put down a pile of black beans and rice. Top it with an egg or two. There you have it black beans and rice with eggs.
