How do you make a plant-based breakfast and feel like you have it all? Make a Beyond Sausage Breakfast Sandwich. You can’t get a breakfast sandwich like this anywhere but home. In fact, this sandwich can be made at home for a small cost.
Furthermore, this breakfast sandwich has all the amenities. Homemade seeded bread, plant-based sausage, tomato, mushroom bacon, sprouts, and egg. In the event you want to keep it vegan, omit the egg or use just egg.
Believe it or not plant-based sausage has about 11 grams per 2 patties. The egg will give you another 6 grams and contrary to what people think you will also get protein from all the vegetables. Flax and chia seeds offer omega 3’s, calcium, fiber, and protein. Sprouts add an extra bonus of nutrients! In other words, this sandwich is loaded with nutrition.
TIP: Salt the eggs after you remove them from the pan. Eggs absorb salt easily, so by adding salt during cooking you cause the egg to cook faster and lose moisture.
MUSHROOM BACON
- Portabello mushroom caps
- maple syrup
- olive oil
- salt
- pepper
INGREDIENTS
- Beyond Sausage Patties
- GF bread, homemade or store bought
- tomato slices
- broccoli sprouts or other sprouts
- eggs, or egg substitute
- salt, to taste
- pepper, to taste
DIRECTIONS
- Preheat the oven to 375 degrees F, for the mushroom bacon. Line a tray with parchment paper.
- Carefully scrape the gills out from under the mushroom with a spoon. Slice the mushrooms to 1/8 inch. Coat both sides with a small amount of olive oil and maple syrup, then season with salt and pepper.
- Bake for 10 minutes, then flip and bake for another 5-10 minutes. Take out and let them rest.
DIRECTIONS
- While the mushrooms are cooking, heat a pan over medium low heat and cook the sausage patties. They take about 8 minutes.
- Once the sausage is done, put in the eggs and cook them how you like. Salt them after you remove them from the pan.
- Toast the bread and slice the tomato.
- To assemble the sandwich, lay down the bread, sliced tomato, mushroom bacon, sprouts, egg and then the sausage.
- Serve immediately.
