Fall is here and it’s time to start making stews and soups! Beef stew is definitely one of my favorites. Stew is considered a comfort food, because it brings people into a pleasurable emotional state. Comfort food does not need to be junk food. It may be a particular meal that brings you back to a certain time in your life that was wonderful.
I like beef stew because it warms me inside and out on a cold day. It also smells amazing while it’s cooking.
INGREDIENTS
- chuck steak
- 4 small potatoes, diced
- 1/2 bag of baby carrots
- 2 stalks celery, diced
- 1 medium onion, diced
- 1 clove garlic, chopped
- gluten free flour
- 2 tablespoons olive oil
- 1 -2 teaspoons thyme
- 1/2 teaspoon cumin
- salt, to taste
- pepper, to taste
- 1 cup of red wine, merlot works well (optional)
I used a crock pot/pressure cooker and set it on brown/saute to start the beef stew. Add the olive oil to the pot. Cut the chuck steak into three pieces and coat it with flour, salt ,and pepper. Saute the chuck steak on high and brown on both sides.
Dice up the onions, celery, potatoes, and garlic. Add them to the pressure cooker along with the carrots. Put in the thyme, cumin, salt, and pepper.
Cover everything with water (wine if you wish, it does add more depth to the flavor to your beef stew), lock on the lid, and set the time for 1 1/2 – 2 hours.
After a half an hour you will start to smell the beef stew and it will make your mouth water! You will be counting down the minutes until it is done. Make sure you have some biscuits to slather with butter and dip in the gravy.
Once the pressure cooker is done you can release the pressure, but be careful not to burn yourself. After you take of the lid, check your seasoning, and thicken the gravy with flour if you need to.
Take some cool water, add some flour and whisk it together until it is smooth. Add a little bit of the hot gravy to the mixture and combine. Add this to the pot slowly and stir in to combine and thicken.

These biscuits were made with a box of mix by Simple Mills and they are absolutely delicious. The next batch of almond flour biscuits I make will be completely from scratch.
