Try making these gluten free dairy free chocolate pancakes for your loved one. When I think of Valentine’s Day I think of chocolate. I wanted to make something extra special for my son today. I was making pancakes and saw the Hersey’s cocoa sitting there, so I decided to try adding it to my mix. It was a huge success! Both my son and I felt like we were eating dessert for breakfast. The cocoa and chocolate chips make these pancakes taste decadent. Add some whip cream and you will be in heaven.
INGREDIENTS FOR CHOCOLATE PANCAKES
- 1 cup Gluten free dairy free pancake mix
- 1/2 cup almond milk
- 1 egg
- 2 tablespoons canola oil
- 1 tablespoon Hershey’s cocoa
- 2 tablespoons granulated sugar
- 1/4 cup gluten free dairy free chocolate chips
- confectioners sugar, to sprinkle on top
- gluten free dairy free whipped cream – Reddi whip
- strawberries
I used Wegman’s gluten free all purpose baking mix to make these chocolate pancakes. Just follow the directions on the box. First, mix together 1 cup of baking mix, 2 tablespoons of canola oil, 1 egg, 1/2 cup of almond milk. Second, add 1 tablespoon of Hershey’s cocoa and 2 tablespoons of sugar. Last, add about a 1/4 cup of gluten free dairy free chocolate chips.
Heat the griddle or frying pan over a medium heat for about 5 minutes. Once the pan is ready pour the pancakes. When you see the pancakes start to bubble they are ready to flip over. Cook them for another 2-3 minutes. After you make the chocolate pancakes use a heart shaped cookie cutter to make some cut outs. Now dust the pancakes with confectioners sugar. To finish them off add some whipped cream, strawberries, and a few extra chocolate chips.
Kids and adults will love these chocolate pancakes with chocolate chips on any day not just Valentine’s Day. My son told me we have to make pancakes like this all the time. There will be no regular pancakes on his watch.
